Spicy Noodle Bowl

This was such an enjoyable lunch and it was ready in no time!

Recipe

  • rice noodles

  • brussels sprouts

  • haddock

  • lime

  • garlic

  • paprika

  • alfalfa sprouts

  • sweet onion

  • olive oil Sauce:

  • miso paste

  • sriracha

  • salt & pepper

  • water

Preheat oven to 450. Toss the brussels sprouts in olive oil and paprika and place on baking sheet. On the same sheet place the haddock fillets. Drizzle the fillets with olive oil, squeeze fresh lime juice and minced garlic. Bake for 8-12 minutes. Half way through bake time, flip the haddock and toss the brussels sprouts.


Meanwhile, cook the noodles in boiling water. Should only take 3-5 minutes to desired softness. Drain & rinse when done.


In a mason jar, mix 1 tbsp. of miso, squeeze sriracha and add about 1 tbsp. of water, add salt and fresh pepper. Place the lid on the mason jar and shake until mixed. Add more sriracha if you you want it to be spicier and add more water if you don’t want it thick.


Place the noodles, brussels sprouts & haddock in a bowl, drizzle with the sauce and top with diced onion and as many sprouts as your heart desires!!
