Super easy & delicious homemade protein bars
These bars are perfect snacks for when you need a pick-me-up or even post workout! They contain protein, healthy fats, and lots of fiber to fuel your body. I didn't realize just how simple they are to make, and a bonus.. you don't have to bake them!
Ingredients:
1 cup crunchy peanut butter
1 tbsp maple syrup (if you wanted added sweetener)
1/2 cup rolled oats
2 scoops of protein powder (I used the Isagenix Whole Blend IsaLean™ Shake)
Approx 2 tbsp water
1 tbsp hemp seeds
1/2 tbsp chia seeds
1 1/2 tbsp shredded & unsweetened coconut
1/3 cup dark chocolate chips
Approx 1 tsp coconut oil
Please note that I do eyeball a lot of my recipes so if you try making these and my measurements are a little off... Sorry! Either add more or less of the ingredient...
Directions:
Step 1: Add the peanut butter and the maple syrup to a pot and then put it on the stove over medium to low heat. Stir for approximately 2-3min until it is "thinned" out.
Step 2: Remove from heat and add to a medium bowl. Add in the oats, protein powder, hemp seeds, chia seeds, and mix. Add 1/2 of the shredded coconut. If the mixture is too thick, add a little bit of water at a time until it is soft enough to lay in a dish. It should not be runny but should have a consistency that you can mold!
Step 3: Pour the mixture into a square dish and press it into a square, making sure it is as even as possible.
Step 4: Chocolate! Mix the chocolate chips with a little bit of coconut oil in a microwave-safe dish or heat up on the stove and heat until melted (approx 30 sec in the microwave).
Step 5: Drizzle the chocolate over the bars then sprinkle the rest of the shredded coconut on top.
Step 6: Put them in the freezer so the chocolate can harden then take them out and cut them into squares.
Step 7: Store in the fridge and enjoy!
