The Best Pumpkin Banana Oat Pancakes

September is my favorite time of the year. The leaves are changing, sweaters and comfy clothes are coming out, and of course... pumpkin everything!


Pumpkin contains key nutrients such as calcium, iron, potassium, magnesium, sodium, vitamin C, and zinc to support healthy blood pressure levels and a healthy immune system. It is also a great source of fiber! Adding pumpkin to your Sunday morning pancakes is always a yes in my books.



Ingredients:
  • 1 cup pumpkin purée

  • 1 banana, mashed

  • 1/3 tsp baking soda

  • 1/2 tsp baking powder

  • Dash of pumpkin spice

  • 1/2 tbsp coconut oil + some to cook

  • 1 egg

  • 1 cup oats


Directions:

Blend/ process the oats into flour. Mix the oats, baking soda, baking powder & pumpkin spice in a medium bowl.


In a separate bowl, mix the pumpkin, banana, coconut oil & egg in a medium bowl.


Mix all ingredients together & cook! (If you don’t know how to cook & flip a pancake- check out YouTube or Google🤪)


Top with:
  • Walnuts

  • Drizzle with a nut butter

  • Heat frozen blueberries or other berry & add chia seeds to make a "jam"
